Maintenance of frozen treat equipment is a requirement for a successful, profitable frozen treat program. Cleaning

The first and most obvious of maintenance procedures is the timely and proper cleaning of your machine. How often do you need to clean your machine? This is determined by your local health department, be sure to check with them to find out the required cleaning cycle.

Maintenance tips

On nights that the machine is not cleaned, there are several things that you should do to maintain proper sanitation:

  • Remove the drip tray, drip tray insert and rosette caps, clean and sanitize them and allow to air dry.
  • Wipe down the machine with soft serve machine sanitizer utilizing either a disposable wipe or dedicated rag.
  • It is important not to use a wipe or rag that has been used elsewhere in order to prevent crosscontamination.
  • A good operational procedure is to have a small container of the soft serve machine sanitizer next to the machine while you are open to keep your machine clean.
  • Before you startup the machine the next morning, skim the foam from the mix in the hoppers with a sanitized spoon and discard.

These procedures will ensure the food safety of your machine.

Heat is your enemy

Another factor to consider is heat. It is critical that your machine is able to efficiently remove the heat that is produced in the cooling cycle. If heat cannot be removed, the machine will run longer thus causing “product breakdown” resulting in unacceptable product being served.

If you have an air-cooled machine, unplug the unit, remove the side panel and take out the filter that is on the condenser (the condenser looks like the radiator on your car). Wash this filer and reverse the procedure to install. On a water-cooled unit, make sure that the water hoses are not kinked or deteriorated. Replace as necessary.
